"We needed little from a store. A trip to Souris was a twice a year outing at exhibition and Christmas time. If mother needed anything, she got it off the Mossey's wagon. Everybody had a job. Mine was the hens. I had to collect the eggs every day and kept them fed. My oldest brother was bad to me. He would hide somewhere with a handful of wet mud. He would throw it it me. I was always careful with the eggs, so they would not break. I never dropped one. One day he made me mad. He threw some wet manure at me. I was a frightful mess. I knew I had a cracked egg. I found it. I threw it and hit him on the forehead. Mother made a show of being cross. Once he was gone, she hugged me and laughed. "

BAKED OMLETTE

This baked omelette is delicious hot out of the oven, or cold out of your picnic basket, served with a salad.

This egg bake is a wonderful source of protein. You can put any of your favourite vegetables, herbs, meat and cheese in it. This is also a great way to use up leftovers.

Pre heat your oven to 350 degrees
8 farm fresh eggs
½ cup of milk
1 to 2 cups of vegetables
½ cup of cooked meat
A small handful of fresh herbs of your choice
2 cloves of garlic, minced
½ teaspoon of sea salt
1 cup of grated cheese

Whisk the eggs and simply add all of the other ingredients except for the cheese.

Pour the egg mixture into a high-sided fry pan and sprinkle the cheese on top. Bake until the eggs are firm, cheese starts to brown and the eggs have doubled in height, about 25 minutes.

Cut the baked omelette like a pie and enjoy!

Variation:
If you pour the mixture into an uncooked deep-dish piecrust and then bake it, you will have a delicious Quiche!

Ms. Leslie has been employed in Whistler, B.C., Canada, England, Ireland, and Halifax, N.S., Canada. Rachel is an athlete who participates in long-distance running.
